Ella's Elegant Maple Walnut Pie

Pie Crust (one 8" shell):

1 c. flour
1/2 c. Crisco
1/4 c. water
1/2 tsp. salt
1/4 c. finely chopped walnuts (optional)

Filling:

6 Tblsp. butter
6 Tblsp. flour
1 1/2 c. Hillsboro Sugarworks Dark Amber maple syrup
2 egg yolks
1/2 c. water
pinch of salt
Pie Crust: Blend flour and Crisco together. Add remaining ingredients and roll out on floured surface. Place crust in pie pan. Bake in preheated 450° oven for 10-12 minutes. Set aside.

Filling: Cook butter and flour approximately 1 min in large saucepan.

Combine and stir the rest of the ingredients into the flour mixture and bring to a boil – cook another 1 – 2 minutes, whisking constantly. Pour immediately into pie shell. Place chopped walnuts on top. Refrigerate – may also be topped with a dollop of whipped cream when cooled or just before serving. Serving: 1 pie
