Hillsboro Sugarworks Maple Apple Bread

1 ¾ cups King Arthur Unbleached Flour
½ tsp. ground cinnamon
¾ tsp. baking soda
½ tsp. salt
½ tsp. baking powder
1 beaten egg
1 cup Hillsboro Organic Grade B or dark
amber Vermont maple syrup
1 ¾ cup finely shredded apple
¼ cup cooking oil
½ cup chopped walnuts (if desired)

Preheat oven to 350F. Grease the bottom and sides of a loaf pan. In a medium bowl combine the flour, cinnamon, baking soda, baking powder, and salt. Make a well in the center of the flour mixture; set aside. In another medium bowl combine egg, maple syrup, apple and oil. Add the mixture all at once to the dry ingredients and stir just until moistened. Stir in nuts (if desired). Spoon batter into prepared pan. Bake in a 350 degree oven for 50 to 55 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack. Yield: 1 loaf
